Our Renowned Herb Garden

The gardens play an important role in the life of Congham Hall, providing homegrown produce for the restaurant tables.

Congham Hall’s renowned Herb Garden attracts visitors from far and wide. A draw for people seeking out the best gardens in England, it has featured in television programmes, calendars and magazines, as well as books such as Crabtree & Evelyn’s Fragrant Herbal.

Good Honest Food

While enthusiasts come to admire our collection of almost 400 varieties of herbs – including rare medicinal varieties such as goat’s rue, a wild legume that was historically used to treat the plague – the hotel gardens also play an important role in daily life here at Congham Hall.

Self Sustained

Our gardeners pick culinary herbs twice daily to meet the chefs’ needs for flavouring and garnishing and in the creation of aromatic oils and vinegars to complement the seasonal dishes served in the restaurant.

Seasonal

In spring, light meats and delicate fish are enhanced by basil and buckler leaf sorrel.While our summer herb salad might include sweet cicely, salad burnet, celery leaf, lovage, herb flowers and oriental mizuna. The meat-based and game dishes that feature on the autumn and winter menus benefit from the stronger flavours of traditional herbs such as sage and rosemary.

Take A Stroll

Hotel Guests are free to explore the Herb Garden at any time, but a stroll at dusk or in the early morning will awaken the senses as the heady aromas fill the air.
